Caprese Sandwich

A great burger alternative when you are craving a meatless or vegetarian sandwich. caprese staples are often kept in our refrigerator as they make healthy and fast meals in minutes. additionally I always keep a high quality bread, or bag of rolls in the freezer for last minute, late night meals. in this sandwich I used spinach for an extra power kick, however you can (and traditionally should) use basil. a basil paste is effortless to make and can be stored in the fridge for up to a week. here’s how…

recipe

2 cups basil

1/2 cup very good quality olive oil
…………………………………………………………………………………………………………………….
salt and pepper  (to taste)

crushes pine nuts (optional)

finely grated parmesan cheese (optional)

procedure

if adding the pine nuts, pulse them to the desired consistency, prior to the basil. the same for the parmesan cheese, both separately of course.
pulse basil in your food processor, add oil, s&p, and pulse. remove from processor, and transfer to a bowl. gradually incorporate finely chopped pine nuts & fold in the parmesan at the very end.

brush bread with basil paste add ripened tomatoes, buffalo mozzarella and extra pepper if desired. sit back & enjoy
